Grilled Beet Salad
Grilling or roasting beets brings out their natural sweetness and makes them a great match for slightly bitter greens like spinach and arugula.
There are many beet varieties ranging from deep red, pink and white patterned to golden yellow in color. Beets are an excellent source of the B vitamin folate, a very good source of potassium, and a good source of vitamin C, magnesium, iron, copper and dietary fiber.

Everyday what we eat and drink affects our energy levels, our moods, our ability to focus and concentrate, how we feel when we exercise, and how we sleep. Beyond Broccoli keeps the emphasis on food to get well, stay well or manage illness. While Beyond Broccoli; is not anti-supplement our mission is to educate, counsel, and coach using a “food first” approach.
Beyond Broccoli individual nutrition consults also recognize that behavior change is at the core of successful nutrition counseling and coaching. We know that even simple change is not always easy and we must go beyond merely providing information to help you improve your nutrition. At Beyond Broccoli it is all about you. The plan we come up with, together, is based on your nutrition and health needs including the skills and tools you need to make changes. We also know that even small changes can be significant and are the ones you are most likely to sustain for a lifetime.
The teaching philosophy at Beyond Broccoli is based upon planting the seeds of nutritional change for long term health and wellbeing. Whether we are counseling individuals, families or couples, teaching small group nutrition classes, presenting large group nutrition lectures or food demonstrations, or writing about nutrition, the same passion is at the core. Food first – and foods that are good for your health can taste great, fit into your lifestyle, and be enjoyed with people you care about.
New Ventures for Beyond Broccoli
Earlier this year Beyond Broccoli began a new consulting relationship with a wilderness therapy program for at-risk adolescent girls called New Horizons. This excellent program is based in northern Maine and offers a combination of intensive therapy with a self-esteem building wilderness experience. Beyond Broccoli offers knowledge and experience related to backcountry nutrition, emotional and disordered eating, nutrition related behavior change to improve health and meet the nutritional needs for growing girls. This role includes assessment and review of menus, staff training, a quarterly nutrition newsletter, and ongoing consulting for the nutritional needs of staff and students.
